Easy Healthy Living With Our Communal Garden
One of the best perks of community living is sharing food with your friends and neighbors! The delicious veggies, berries and nuts in these salads are either locally grown and available at our farmers’ markets or freshly picked from our lovely Priya Living communal garden.
Each recipe serves 4.
Prep time: 10 minutes
Salad #1
Spinach, Strawberry, And Pecan Salad
Ingredients
- 1 large bushel of spinach
- 10–15 strawberries
- 1 ½ cups pecans
- Raspberry balsamic vinaigrette (to taste)
- ½ red onion (optional)
- Feta cheese (optional)
- Salt and pepper
Instructions
- Wash and chop spinach
- Peel and chop red onion
- Wash strawberries and chop in half lengthwise
- Crush pecans
- Combine all ingredients in salad bowl
- Add salt and pepper (to taste)
- Sprinkle with feta cheese (optional)
- Add raspberry balsamic vinaigrette (to taste)
- Mix and serve
- Enjoy!
Salad #2
Kale, Apple, Walnut, And Cranberry Salad
Ingredients
- 1 large bushel of green kale
- 1 large red delicious apple
- ½ cup of dried cranberries
- 1 ½ cups crushed walnuts
- 3 tablespoons apple cider vinegar (to taste)
- 2 tablespoons olive oil (to taste)
- ½ red onion (optional)
- Salt and pepper
Instructions
- Wash kale, chop leaves (compost the stems)
- Wash apple and cut into thin slices
- Peel and chop red onion
- Crush walnuts
- Combine all ingredients in salad bowl and sprinkle with cranberries
- Add salt and pepper (to taste)
- Add olive oil and apple cider vinegar (to taste)
- Mix and serve
- Enjoy!
