Kamal Masi's Famous Khichdee Recipe
Ingredients
- 1/2 cup basmati rice
- 1 cup daal (yellow lentils)
- 6 cups water
- 2 tablespoons olive oil/vegetable oil
- 1 teaspoon salt (or more, to taste)
- 1 onion
- 1 tomato
- 4 cloves of garlic
- 4 slivers of ginger
- 1 teaspoon cumin seeds
- 1 handful fresh coriander (to taste)
- 5 green chili peppers (to taste!)
Instructions
- Bring water to boil in a large pot.
- Rinse the lentils and rice together.
- When the water begins to boil, add the rice and lentil mixture. Bring the heat down to medium and cook uncovered for 25-30 minutes, stirring occasionally.
- While the lentils and rice are cooking, chop the garlic, onion, ginger, green chili peppers, and tomato.
- Heat oil in a frying pan on medium heat.
- Add cumin seeds, stir in the chopped vegetables, and cook until light brown.
- Add salt.
- Chop the coriander and add it to the vegetables.
- Remove from heat.
- Add the vegetable mixture to the cooked rice and lentils, and stir on low heat for 5 minutes.
- Ladle into bowls and serve.
