Main Course

Kamal Masi’s Pita Pizza Recipe

Ingredients

  • Whole wheat pitas
  • 6 mushrooms
  • 1 small zucchini
  • 1/2 cup cheese of your preference
  • Handful of spinach (frozen or fresh)
  • Small onion
  • 1 or 2 garlic cloves
  • Tomato sauce
  • Olive oil

Instructions

  • Preheat oven to 400° and lightly oil a pizza tray or cookie sheet.
  • Wash and chop up all veggies.
  • Spread tomato sauce across the pitas, leaving about 1-2cm around the edge.
  • Arrange the veggies on top of the sauce evenly.
  • Sprinkle half of your desired cheese on top.
  • Place in oven and bake for 15-20 min.
  • Sprinkle remaining cheese on top and bake for another 5 min.
  • Remove from oven and serve, or cool and pack up for lunch.
  • Enjoy!
