Communal Living Recipes: Kamal Masi’s Picnic Essentials

In communal living, you have built-in friends and neighbors right next door! One of our favorite ways to come together as a community is through food.

Sandwich #1:

Tofu Salad Sandwich

Ingredients:

  • Bread (I use sourdough, but you can use whatever you like, even tortilla wraps or lettuce leaves)
  • 1 package of firm tofu
  • Vegan mayonnaise
  • Yellow mustard
  • Salt and pepper
  • 2 celery stalks
  • 1 tomato
  • 1 green chili
  • 5 coriander stems
  • Alfalfa sprouts

Instructions:

  • 1. Wash all the veggies (except for the alfalfa sprouts), chop finely, and place into a mixing bowl
  • 2. Crush the tofu into the bowl (I use my hands to squish it!) Add salt and pepper to taste
  • 3. Add salt and pepper to taste
  • 4. Add 1 tablespoon vegan mayonnaise (or more to taste)
  • 5. Squirt a few globs of mustard into mixture
  • 6. Toast bread. Spread the mixture evenly over one slice. Top with alfalfa sprouts and then cover with a second slice of bread
  • 7. Chop diagonally and serve!
Sandwich #2:

“Cold Cut” Vegan Sandwich

Ingredients:

  • Bread (I use sourdough. But, again, you can use whatever you like, even tortillas or lettuce leaves)
  • 1 package of firm tofu
  • Vegan mayonnaise
  • Yellow mustard
  • Salt and pepper
  • 2 celery stalks
  • 1 tomato
  • 1 green chili

Fresh And Minty Cucumber Sandwich

Ingredients:

  • Bread (I use sourdough. But you can use whatever you like!)
  • 1 cucumber
  • A few mint leaves
  • Vegan mayonnaise
  • Salt and pepper

Instructions:

  • 1. Wash the veggies
  • 2. Chop mint leaves into tiny pieces
  • 3. Slice cucumber into circles
  • 4. Toast bread and spread with 1 tablespoon of vegan mayonnaise. Add salt and pepper to taste
  • 5. Add a few pinches of mint leaves and then layer with cucumber slices
  • 6. Cover with a second slice of bread
  • 7. Chop diagonally and serve!
