Summer Sandwiches!
Summertime means fun in the sun and being outdoors as often as you can be. Nobody wants to be stuck in a hot kitchen preparing food. Hence my staple meal, which is an essential for picnics, pool parties, and BBQs: SANDWICHES!
Yes, sandwiches. I'm not talking about run-of-the-mill sandwiches. I'm talking about the most tasty and yet easy-to-prepare sandwiches. Since the ingredients are all veggie/vegan friendly and you can substitute corn tortillas or lettuce wraps for bread, they are an inclusive dish for almost everyone.
Best of all, most of the veggies I use are grown right here in our communal garden at Priya Living!
Cooking Brings Us Together in Communal Living
As we age, social activities can be more of a challenge, especially if you have limited mobility. In communal living, you have built-in friends and neighbors right next door! One of our favorite ways to come together as a community at Priya Living is cooking, because food is the great equalizer.
Each recipe makes 4 sandwiches

Sandwich #1:
Tofu Salad Sandwich
Ingredients:
- Bread (I use sourdough, but you can use whatever you like, even tortilla wraps or lettuce leaves)
- 1 package of firm tofu
- Vegan mayonnaise
- Yellow mustard
- Salt and pepper
- 2 celery stalks
- 1 tomato
- 1 green chili
- 5 coriander stems
- Alfalfa sprouts
Instructions:
- Wash all the veggies (except for the alfalfa sprouts), chop finely, and place into a mixing bowl
- Crush the tofu into the bowl (I use my hands to squish it!) Add salt and pepper to taste
- Add salt and pepper to taste
- Add 1 tablespoon vegan mayonnaise (or more to taste)
- Squirt a few globs of mustard into mixture
- Toast bread. Spread the mixture evenly over one slice. Top with alfalfa sprouts and then cover with a second slice of bread
- Chop diagonally and serve!
Sandwich #2:
“Cold Cut” Vegan Sandwich
Ingredients:
- Bread (I use sourdough. But, again, you can use whatever you like, even tortillas or lettuce leaves)
- 1 package of firm tofu
- Vegan mayonnaise
- Yellow mustard
- Salt and pepper
- 2 celery stalks
- 1 tomato
- 1 green chili

Sandwhich #3:
Fresh And Minty Cucumber Sandwich
Ingredients:
- Bread (I use sourdough. But you can use whatever you like!)
- 1 cucumber
- A few mint leaves
- Vegan mayonnaise
- Salt and pepper
Instructions:
- Wash the veggies
- Chop mint leaves into tiny pieces
- Slice cucumber into circles
- Toast bread and spread with 1 tablespoon of vegan mayonnaise. Add salt and pepper to taste
- Add a few pinches of mint leaves and then layer with cucumber slices
- Cover with a second slice of bread
- Chop diagonally and serve!
